Formats
Three engagement tiers, plus à la carte additions. The ceremony is the same at every scale — the room, the portioning, and the service change.
Compare tiers
One table. The itamae works at arm’s length and the whole room is inside the breakdown.
A station format for a room that moves. Portions cut and passed continuously through the engagement.
A whole bluefin as the centerpiece of a landmark evening, with staffing and service scaled to the venue.
Guest counts
The fish, the portioning, and the team scale to the room so it never feels stretched.
Intimate holds a single table of six to twelve. Social runs a standing or seated station for a larger, moving room. Grand anchors a landmark evening. Where a headcount sits between tiers, we shape the closest format to the room.
À la carte additions
Additions sit alongside any format — caviar and uni pairings, a sake or champagne flight, a hot course from the collar and head, and more. You shape the courses and the pacing with your itamae.
Send the venue, the date, and a rough headcount, and we will point you to the format that fits.
Guest Notices
Raw seafood. Engagements serve raw and undercooked fish. Consuming raw or undercooked seafood may increase your risk of foodborne illness, particularly for guests who are pregnant, immunocompromised, elderly, or have certain medical conditions.
Allergens. Fish, shellfish, soy, sesame, wheat, and egg are present in our service. Notify us in writing of any allergy at least seven days before the engagement. We cannot guarantee an allergen-free environment.
Sourcing & substitution. Species, cuts, and portioning are subject to availability at market. Where a whole bluefin is unavailable, an equivalent grade may be substituted with notice to the host.
Photography. Engagements may be photographed for our portfolio. Hosts may opt out in writing before the event date. Alcohol service, where added, requires separate arrangement and licensing.
